You can use any white fish or salmon with it.

Ingredients

Marble counter with carrots, celery, fennel, lemon, onion, a yellow pepper, garlic, dill, grape tomatoes, olive oil, two fish steaks and a box of farro
  • 1 medium to large onion, chopped
  • Half of an Italian fennel, chopped
  • 2 medium carrots, shredded coarsely
  • 2–3 celery stalks, chopped
  • 1 pepper, chopped
  • 4–6 cloves of garlic, minced
  • ½ cup grape tomatoes, cut into halves
  • A few tablespoons of chopped dill
  • 1 lemon: cut in half, plus 4 slices with skin removed
  • Optional: ½–¾ cup white wine
  • 2–4 pieces of fish of your choice, 2–3 lbs of fillets
  • 2 tablespoons olive oil, to sauté the vegetables
  • Grain of your choice for a side dish. I used farro, but rice, buckwheat or quinoa work just as well.

Directions

  1. As you start chopping up the vegetables, rinse and start cooking the grain.

  2. Set your oven to bake at 425°F.

  3. Cut your veggies into small to medium slices. Sauté over medium heat, starting with the fennel, celery and onion. After 3 minutes, add the garlic and pepper and sauté for another 3 minutes.

  4. Add some fish and seafood seasoning for spice.

  5. Add the coarsely shredded carrots and ½ cup of vegetable or chicken stock. Cook for 3 more minutes.

  6. Lay out your sautéed veggies in the baking dish.

  7. Lay the fish over the veggies, cover with the grape tomatoes, and season with the chopped dill and the juice of a whole lemon. Then lay a few lemon slices (seeds removed) over the fish.

  8. Adding ¾ cup of white wine is optional, but it certainly adds flavor. Pour it evenly over the fish and veggies.

  9. Transfer to the oven and bake at 425°F for 25 minutes.

  10. Enjoy
